Tasting Notes:

We think that Honduran coffees are the best-kept secret in the coffee industry. They are generally more complex than a typical Latin American coffee bean, and yet they have the smooth and rich notes that make Latin American coffees famous. This coffee is more fruit-forward with notes of berry, perhaps a raspberry jam. The rich, tart taste of berry pairs exceptionally with the mellow sweetness of melon. A subtle floral finish adds the perfect aroma to the cup. The juicy body and clean mouthfeel makes this coffee an ideal morning brew.

El Ajagual

Roel Edgardo Henriquez Romero owns the 17-hectare farm called El Ajagual, where he grows IHCAFE 90 variety coffee. The coffee is picked ripe and de-pulped the following day, then fermented dry for 36 hours before being put on the patio to dry. It's finished in the solar drier. The drying time for this Honey lot takes 31 days.
